THE STORY OF THE DISH

The celebrated softness,
reimagined with vegetables.

The galawat is remembered first for its texture. It should arrive with the quiet perfume of spice, take the faintest colour from the tawa and dissolve almost as soon as it reaches the palate.

At DUM, the vegetarian expression draws on minced vegetables, onion and cashew, held together lightly and seasoned with potli masala. It keeps the delicacy of the Lucknowi original while allowing every ingredient to retain its own poise.

THE DELICATE WAY

Method

01

Prepare the vegetables

Steam the carrot, beans, peas and cauliflower until just tender. Cool completely, then mince finely. Press the mixture in a clean cloth to remove every trace of excess moisture.

02

Build the aromatic base

Warm a little ghee and cook the onion slowly until deep gold. Add ginger, green chilli and potli masala, then fold through the vegetables. Cook gently until the mixture feels dry and cohesive.

03

Refine the texture

Cool the mixture before working in cashew paste, roasted gram flour and salt. Mash until perfectly smooth. Rest for 20 minutes so the flavours settle and the mixture becomes easy to shape.

04

Finish on the tawa

Shape into small, flat medallions with lightly greased hands. Cook on a warm, well-seasoned tawa with a restrained spoonful of ghee, turning once, until each side carries a fine golden crust.

THE AWADHI TRADITION

What makes a Lucknowi galawat so distinctive?

The galawat is a study in refinement. Its success rests on a smooth texture, measured spice and the discipline to handle the kebab as little as possible.

01

The texture

The mixture is minced and worked until no coarse piece remains. Moisture is controlled carefully so the kebab holds without becoming dense.

02

The perfume

Potli masala lends warmth and fragrance in layers. No single spice should announce itself more loudly than the rest.

03

The tawa

A gentle flame creates the thinnest golden crust while protecting the soft, almost weightless centre.

How to serve Subz Galawati Kebab

Serve the kebabs directly from the tawa while their edges remain delicately crisp and the centre is still warm and yielding.

Ulte tawe ka paratha

A soft, fine bread that supports the kebab without masking its texture.

Mint and coriander chutney

Keep it fresh, smooth and gently sharpened with lime.

Laccha onion and lime

A restrained garnish for freshness and a clean finish.

BEST PAIRED WITH

Murgh Badam Shorba

A delicate almond-enriched broth that prepares the palate before the spice and softness of the kebab.

NOTES FROM THE TAWA

Three details that shape the result

Remove the moisture

Even a little excess water can make the kebabs fragile. Cool and press the vegetables thoroughly before adding the binding ingredients.

Keep the binding light

Use only enough roasted gram flour to bring the mixture together. Too much will mute the flavour and make the centre heavy.

Turn only once

Let the first side form a fine crust before lifting the kebab. Repeated turning disturbs the texture the recipe is designed to protect.

QUESTIONS, ANSWERED

Subz Galawati Kebab FAQs

A few useful answers before the tawa is warmed.

What is Subz Galawati Kebab?

Subz Galawati is a vegetarian interpretation of Lucknow’s celebrated galawat kebab. It combines finely minced vegetables, aromatic spices, browned onion and a light binding to create a remarkably soft texture.

Why does my kebab mixture feel too soft?

The vegetables may be holding excess moisture. Cook the mixture gently until dry, cool it fully and add roasted gram flour a little at a time. Avoid adding too much, as it can make the kebabs dense.

Can the mixture be prepared in advance?

Yes. Prepare it a day ahead and keep it covered in the refrigerator. Bring it close to room temperature before shaping so the kebabs cook evenly.

Can Subz Galawati be cooked without much ghee?

A well-seasoned non-stick or cast-iron tawa needs only a light brushing of ghee. Its aroma contributes to the traditional finish, so a small amount is preferable to omitting it entirely.

The finest kebab does not demand attention. It earns it through fragrance, warmth and a texture remembered after the plate is cleared.
